
Provençal food is tasty and colourful, often with a definite whiff of garlic about it, and more than a dash of olive oil. The dish shown here samples various specialties like a warm mixture of red and green peppers, stuffed tomatos, zucchini and eggplant, spicy tomato sauce, and a piece of toasted bread covered with tapenade, a mixture of crushed olives, salt and olive oil, which exists in various colours and preparations, sometimes enriched with anchovies. The thing to drink with this is a nice and fresh Rosé de Provence.
