The typical dish of Troyes is called andouillette -- a sausage stuffed with pork chitterlings. Andouillettes are considered a delicacy by many people, even by King Louis II of France, who was crowned in Troyes. Personally, I must confess that I did not like its strong taste of ... well ... dead pig ! Fortunately there was some good mustard cream sauce with it, and a good local wine to wash it down.
